In 2019, Royd Lemus drew up plans for a roadside attraction to catch agri-tourists heading through Florida’s Everglades and onward to the Keys. His vision was a farm-to-table outdoor restaurant with a Western theme that served Cuban food. The key to making the dream a reality: bringing Miami’s king and queen of Cuban cuisine, Quintín Larios and María Teresa Larios out of retirement.
